Ingredients
- 12 oz pasta (penne, spaghetti, or your choice)
- 1.5 lbs chicken breast (or thighs), sliced
- 2 tbsp olive oil
- 5–6 cloves garlic, minced
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp red pepper flakes (optional)
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan
- 2 tbsp butter (optional)
- 1 tbsp lemon juice (optional)
- 2 tbsp parsley, chopped (optional)
Instructions
- Cook pasta in salted water until al dente. Reserve 1/2 cup pasta water, then drain.
- Season chicken with salt and pepper. Heat olive oil in a large skillet over medium-high heat and cook chicken until browned and cooked through. Remove to a plate.
- Reduce heat to medium. Add garlic (and red pepper flakes if using) and cook 30 seconds until fragrant.
- Add broth and scrape up browned bits. Add pasta and chicken back in. Toss to combine.
- Stir in Parmesan (and butter if using). Add a splash of reserved pasta water as needed to loosen.
- Finish with lemon and parsley if desired.
