Ingredients
- 1 lb ground chicken
- 1/2 cup ricotta cheese
- 1/4 cup parmesan cheese, grated
- 1/2 cup breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil (for cooking)
Instructions
- Make meatball mixture:
- In a bowl, combine ground chicken, ricotta, parmesan, breadcrumbs, egg, garlic, Italian seasoning, salt, and pepper. Mix until just combined.
- Shape meatballs:
- Form into small meatballs (about 1.5 inches).
- Cook meatballs:
- Heat olive oil in a skillet over medium heat. Cook meatballs for 8-10 minutes, turning occasionally until browned and cooked through. Remove and set aside.
- Make Alfredo sauce:
- In the same pan, melt butter and sauté garlic for 30 seconds. Add heavy cream and simmer for 3-4 minutes.
- Add cheese & spinach:
- Combine:
- Return meatballs to the pan and simmer in the sauce for 5-7 minutes until coated and heated through.

Notes
