In a large skillet, brown the ground beef with onion and garlic over medium heat until no longer pink. Drain grease if needed.
Add salt, pepper, and paprika. Stir to combine and cook 1 more minute.
Pour in beef broth and heavy cream. Add uncooked bowtie pasta and stir well.
Bring to a boil, then reduce heat to low. Cover and simmer 10–12 minutes, stirring occasionally.
Once pasta is tender and liquid mostly absorbed, stir in cheddar cheese until melted and creamy.
Garnish with parsley if desired and serve warm.
